Organic Mutton

Organic mutton has become more and more popular over the last two years. We have it available from October to the end of March. Our customers enjoy the rich, full flavour from this sumptious burgundy red meat, and demand it for traditional Irish Stews to keep them warm over the cold winter months.

Our organic mutton is produced from our own organic breeding ewes when they have reached the end of their productive life. The ewes are fattened on an entirely forage based diet of clovers, grasses and red clover silage and are selected for slaughter when they are sufficiently fat. The meat is matured on the bone for at least 12 days until it is judged sufficiently tender for our customers to enjoy.
